Ingredients

**White : **White Sauce**

4 : c Milk

1/4 : c Butter or margarine

2/3 : c All-purpose flour

1/2 : Bay leaf

1 : ts Salt

1/3 : c Freshly grated Parmesan

6 : c Eggplant; finely diced

1 : tb Olive oil; (plus one tsp

1 : c Onions; finely chopped

2 : ts Minced garlic

1/2 : ts Cinnamon

1 : pn Ground red pepper

1 : lb Lean ground beef

1/2 : ts Dried mint flakes

1/2 : ts Freshly ground pepper

1/4 : c Tomato paste

1 : cn (28-oz) tomatoes

1/3 : c Fresh flat-leaf parsley;

-chopped : -chopped

1 : pk (6-oz) ziti pasta; cook

Directions

1: Preheat oven to 375 °

2: Grease cookie sheets

4: Cream together shortening, butter, sugars and eggs

6: Add the rest of the ingredients (in order) and mix well

8: Spoon a tablespoonful amount into hand, shape into a ball and place on greased cookie sheet

9: Bake for 10-12 minutes or until golden

10: Cool on rack a few minutes before eating

11: *Note- I add less chips because I don't like a lot of chocolate chips

12: The cookie dough tastes so good you don't need a lot of chips

13: I always use butter because I think it makes a better cookie

14: I also use butter flavor crisco instead of plain shortening

18: Sometimes if the dough feels a little sticky I add extra flour (not too much) until it's easier to roll in your hands

19: I bake them on the reverse side of the cookie sheets and it works very well to make a nice chewy cookie

20: Don't let them overcook, as soon as the edges start to look brown, even if the center isn't set, they will be fine once they are cooled

21: Leave them on the cookie sheet for a minute or two and then cool completely on wire racks

22: When I picked up this recipe the author had written that these cookies stay soft for a long time
