0: Place artichoke hearts in a large bowl and stir in egg yolks and baking powder

1: Add green onion

2: Fold in lemon peel

3: Mix in flour, salt and pepper

4: In a separate bowl, beat egg whites and cornstarch together until peaks form

5: Fold egg whites into artichoke mixture

6: Heat oil to 360 degrees

7: With a tablespoon, drop half dollar sized dollops of fritter batter into oil

8: Fry until golden brown, maintaining oil at 360 degrees

9: Remove fritters with a slotted spoon and drain on paper towels
