Caesar Chicken-Salad Sandwiches recipe

Ingredients

2 : c Flour

1 : tb Sugar

2 : ts Baking powder

1/2 : ts Baking soda

3/4 : ts Salt

1/4 : c Cold butter

1 : Egg

2/3 : c Buttermilk

Milk : Milk for brushing tops

Sugar : Sugar for sprinkling

3 : c Flour

1/3 : c Sugar

2 : 1/ ts Baking powder

1/2 : ts Baking soda

3/4 : ts Salt

12 : tb Butter

1 : c Buttermilk

3/4 : c Currants

1 : ts Grated orange rind

-(orange : -(orange part, or zest only)

1: Preheat broiler

3: Combine chicken, 2 teaspoons lemon juice, and soy sauce in a large zip-top plastic bag; seal and marinate in refrigerator for 10 minutes, turning bag once

4: Remove chicken from bag

5: Place chicken on a broiler pan coated with cooking spray; broil 6 minutes on each side or until done

6: Cool; shred chicken with 2 forks

8: Combine chicken, 1 teaspoon lemon juice, mayonnaise, and next 5 ingredients (mayonnaise through pepper)

9: Spread 1 cup chicken mixture over each of 2 bread slices

10: Top each with 1 lettuce leaf, 2 tomato slices, and 1 bread slice

11: Store sandwiches in small zip-top bags in refrigerator
