0: Cut bottom stems off collard greens up to the leaves
1: Stack 3 to 4 leaves
2: Roll leaves and cut crossways in 1/2-inch strips
3: Continue process until all leaves are cut
4: Wash cut leaves thoroughly
5: Add vegetable oil to large heavy pot
6: Once oil is hot add 1/2 cup minced onions, 1/2 cup carrots, and all 4 pieces of smoked turkey wing
7: saute about two minutes
8: Add washed greens and chicken stock
9: Cover pot and cook for about 1 hour and 45 minutesw, or until greens are tender
10: Once greens are tender, remove pot from stove
11: Add vinegar and sugar to collard greens
12: Stir greens
13: Let greens stand two minutes before serving
14: Garnish with remaining minced onions and diced tomatoes
15: Yield: 6 servings
