9: For the pancake: Preheat the oven to 450 deg F
10: In a bowl, beat the eggs, egg beaters (whites), flour, milk and vanilla until smooth; set aside
11: Spray a non stick round 12" baking dish with the nonstick cooking spray
12: Put it in the oven to heat for about 5 - 7 minutes
13: When the baking dish is hot, remove it carefully and pour in the batter and put it back into the oven for 15 minutes
14: After baking for 15 minutes; lower the temperature to 350 deg F and bake for an additional 10 minutes
15: While the pancake is baking for the first 15 minutes, prepare the apple topping: In a large skillet, combine the honey, cinnamon and nutmeg
16: Warm over medium heat until the honey liquefies and mixes with the spices
17: Add the apples and heat them until just tender
18: The pancake should have puffed dramatically, especially around the sides
19: Serve immediately, with the topping, before it settles
20: Serves: 4 This has a wonderful flavor
