3 : 1/ c All-purpose flour; divided
1 : tb Baking powder
1/2 : ts Salt
3/4 : ts Ground nutmeg
1/4 : ts Ground cloves
1 : c Applesauce
3/4 : c Sugar
2 : Eggs
2 : tb Vegetable shortening
Vegetale : Vegetale oil
0: Preheat oven to 425 degrees
1: Stir together flour, wheat germ, spices, baking powder and salt in a large bowl
2: Set aside
3: Stir together honey, carrots or pumpkin, applesauce, vegetable oil and eggs in second bowl
4: Stir wet ingredients into dry, mixing until completely moistened
5: Do not over beat
6: Coat mini-muffi pans with vegetable oil spray and spoon in batter
7: Bake for 1-to14 minutes, until muffins will spring back when touched
