1/3 : c Vegetable oil
1 : /2 c Mashed ripe bananas ( 3 )
1/2 : ts Vanilla
3 : Eggs
2 : 1/3 c Bisquick baking mix
1 : c Sugar
1/2 : c Chopped nuts (optional)
0: Sift together flour, baking powder and salt; set aside
1: Cream together shrtening and sugar in bowl until light and fluffy, using electric mixer at medium speed
2: Beat in eggs, one at a time, blending well after each addition
3: Stir in mashed bananas
4: Add dry ingredients all at once, stirring just enough to moisten
5: Gently mix in chopped nuts
6: Spoon batter into greased 3-inch muffin-pan cups, filling 2/3rds full
7: Bake in 350 degree F
8: oven 20 minutes or until golden brown
9: Serve hot with homemade jam or jelly
