Ingredients

1/3 : c Vegetable oil

1 : /2 c Mashed ripe bananas ( 3 )

1/2 : ts Vanilla

3 : Eggs

2 : 1/3 c Bisquick baking mix

1 : c Sugar

1/2 : c Chopped nuts (optional)

Directions

0: For plain bannock, omit rolled oats and increase the all purpose flour to 1 cup

4: Stir together flours, oats, sugar, baking powder and salt

5: Add melted butter, raisins (if using) and water, adding more water if needed to make sticky dough

6: With floured hands, pat into greased pie plate

7: Bake in 400F oven for 20 to 25 minutes or until browned and tester comes out clean

8: Cut into wedges

9: SERVES:6 VARIATIONS: In place of raisins add chopped dried apricots or fresh berries
