Directions

0: In a medium bowl sift together the flour and baking powder

1: Stir together the flour and baking powder

2: Stir in the barley

3: In a small bowl whisk together the milk, banana, egg whites and maple syrup

4: Pour the milk mixture into flour

5: Combine quickly; don't over-mix

6: Heat a well-seasoned cast-iron skillet or non-stick frying pan over medium-high heat

7: Add half the oil

8: spoon in 1/4 C of the batter for each pancake

9: Cook until bubbles form on top of each

10: Then flip and cook the other side

11: Repeat with remaining oil and batter

12: Serve immediately
