2 : c Romaine lettuce; torn

0: Best: Basic Muffin Mix: In large bowl, stir together all-purpose and whole wheat flours, bran, milk powder, sugar, baking powder and salt until combined

4: In separate bowl, whisk together chopped dates, orange rind and juice, oil, eggs and vanilla; stir into dry ingredients just until moistened

5: Pour into greased 8x4-inch loaf pan; arrange quartered dates in line lengthwise on top

6: Bake in 350F 180C oven for 55 minutes or until tester inserted in centre comes out clean

7: Let cool in pan for 15 minutes; remove loaf to rack and let cool completely

8: Makes 1 loaf, 16 slices
