0: Preheat oven to 300øF

1: Grease and flour baking sheet

2: Using an electric mixer with a dough hook attachment, combine flour, 1 C

3: sugar, baking soda and powder, and salt in a large bowl until blended

4: In a small bowl, whisk 2 eggs, 1 egg yolk, vanilla, and orange zest

5: Add egg mix to flour mix; continue beating until a soft dough forms

6: Turn onto a lightly floured surface

7: Add walnuts and knead 3 minutes or until walnuts are evenly distributed

8: Divide dough in half

9: On baking sheet, shape each piece of dough into a 2 1/2 x 10-inch loaf, flouring hands as necessary

10: Allow 3 inches between loaves on a baking sheet

11: In a small bowl, combine remaining 2 T

12: sugar and cinnamon

13: In another small bowl, beat remaining egg and water

14: Brush loaves with egg mixture; sprinkle with sugar and cinnamon mix

15: Bake 45 to 50 minutes or until loaves are lightly browned

16: Cool 10 minutes on baking sheet

17: Cut loaves diagonally into 1/2 inch slices

18: Lay cut cookies flat on a baking sheet

19: Bake 15 minutes, turn cookies over, and bake 15 minutes longer

20: Transfer cookies to wire rack to cool completely

21: Store in an airtight container

22: Makes about 2 1/2 dozen biscotti
