1 : /2 ts Crumbled dried sage
2 : ts Freshly grated lemon zest
1 : ts Salt
4 : 1-1/2-pound cornish hen;
-rinsed : -rinsed and patted, dry
1 : /2 lb Shallots; trimmed and peeled
1 : /2 tb Vegetable oil
1/2 : c Chicken broth
1/2 : c Red wine
1/2 : c Water
2 : ts Cornstarch dissolved in

1: Lightly spray an 11 x 7" baking pan with nonstick cooking spray
2: Bring water to a boil in a med saucepan over medium heat
3: In a small bowl, combine cornmeal, oats, cinnamon, and sugar, mixing well
4: Add to boiling water, stirring briskly with a fork or wire whisk to prevent lumps
5: Reduce heat to low and cook 15 minutes, stirring frequently
6: Remove from heat and stir in vanilla and raisins
7: Spread mixture evenly in prepared pan
8: Cover and chill overnight
9: To Serve: *NOTE: I decreased the sugar a bit

13: Cut chilled mixture into 8 even pieces
14: Preheat a nonstick skillet or griddle over medium heat
15: Spray it lightly with nonstick cooking spray
16: Place patties in skillet and cook until crisp on both sides, turning several times
17: Serve hot, drizzled with maple syrup or spread with your favorite jam
