Ingredients

4 : Hens

2 : Apples

1/2 : c Honey

12 : oz Frozen apple juice*

1 : ts Cinnamon

6 : tb Unalted butter

1 : /2 Teapsoons crumbled dried

-thyme : -thyme

1 : /2 ts Crumbled dried sage

2 : ts Freshly grated lemon zest

1 : ts Salt

4 : 1-1/2-pound cornish hen;

-rinsed : -rinsed and patted, dry

1 : /2 lb Shallots; trimmed and peeled

1 : /2 tb Vegetable oil

1/2 : c Chicken broth

1/2 : c Red wine

1/2 : c Water

2 : ts Cornstarch dissolved in

Directions

0: Makes 1 loaf Vegetable oil or melted butter or margarine Combine 1/4 cup of the water, sugar and yeast

1: Stir to dissolve yeast and let stand until bubbly, about 5 minutes

2: Fit processor with steel blade

3: Measure flour, onions, butter, dill weed, salt and soda into work bowl

4: Process until mixed, about 15 seconds

5: Add yeast mixture to flour mixture

6: Process until blended, about 10 seconds

7: Combine cottage cheese and beaten egg

8: Pour evenly over flour mixture

9: Turn on processor and very slowly drizzle just enough remaining water through feed tube into flour mixture so dough forms a ball that cleans the sides of the bowl

10: Process until ball turns around bowl about 25 times

11: Turn off processor and let dough stand 1 to 2 minutes

12: Turn on processor and gradually drizzle in just enough remaining water to make dough soft, smooth and satiny but not sticky

13: Process until dough turns around bowl about 15 times

14: Turn dough onto lightly greased surface

15: Shape into a ball and place in lightly greased bowl, turning to grease all sides

16: Cover loosely with plastic wrap and let stand in warm place until doubled, about 1 hour

17: Punch down dough

18: Shape into smooth ball and place on greased cookie sheet

19: Roll or pat dough into a circle about 8 inches in diameter

20: Brush with oil and let stand in warm place until almost doubled, about 45 minutes

21: Heat oven to 350 F

22: Bake until evenly brown, 35 - 45 minutes

23: Remove from cookie sheet

24: Cool on wire rack
