1 : lg Eggplant; * see note
1/2 : c Unbleached all-purpose flour
1/2 : ts Baking powder
1 : pn Salt
1 : c Beer; approximately
1 : tb Olive oil
0: Heat water and brown sugar in 1 quart pan to boiling; boil uncovered 2 minutes
1: Cool; stir in egg
2: Cut butter into flour, baking powder and salt until mixture resembles fine crumbs; stir in egg mixture
3: Turn dough onto lightly floured surface
4: Knead until elastic, 5 minutes
5: Shape dough into roll, 20" long
6: cover and let rest for 1 hour
7: Heat oil 1" to 365
8: Cut dough into 1" shapes
9: Roll each slice onto lightly floured surface to 5" circle
10: Fry circles, turning once, until golden brown, 2 minutes
11: Drain on paper towels
12: Sprinkle with sugar and cinnamon or serve with honey
