Ingredients

1 : lg Eggplant; * see note

1/2 : c Unbleached all-purpose flour

1/2 : ts Baking powder

1 : pn Salt

1 : c Beer; approximately

1 : tb Olive oil

Directions

0: DISSOLVE YEAST IN 1/2 CUP WARM WATER

1: STIR IN 2 CUPS OF LUKEWARM WATER, FLOUR, SALT AND SUGAR

2: BEAT UNTIL SMOOTH

3: LET STAND, UNCOVERED FOR 3 TO 5 DAYS, AT ROOM TEMPERATURE

4: STIR TWO OR THREE TIMES A DAY

5: COVER AT NIGHT

6: WHEN READY, THE MIXTURE SHOULD SMELL YEASTY BUT NOT SOUR

7: POUR OUT 1 CUP OF STARTER TO USE IN THE "FRIENDSHIP MIXTURE"

8: TO KEEP THIS STARTER, TO THE LEFTOVER STARTER, ADD 1/2 CUP WATER, 1/2 CUP FLOUR AND 1 TEASPOON SUGAR

9: LET STAND FOR AT LEAST ONE DAY, UNTIL BUBBLY AND WELL FERMENTED

10: STORE IN REFRIGERATOR, COVERED, FOR UP TO TEN DAYS

11: USE WITHIN 10 DAYS TO MAKE ANOTHER FRIENDSHIP MIXTURE
