Ingredients

Boneless : Boneless top sirloin steak

Basil : Basil

Thyme : Thyme

Olive : Olive oil

Butcher's : Butcher's twine

4 : Whole trout; about 8-oz

2 : tb Minced fresh parsley

2 : tb Minced fresh tarragon

2 : tb Minced fresh thyme

4 : Thin onion slices; cut in

1/2 : c Butter; melted

1 : ts Paprika

2 : tb Cognac; or dry white wine

1 : Orange; juiced

Fresh : Fresh herbs; for garnish

2 : lb Trout left whole; or

1 : Whole fish per serving; see

1 : Long loaf of fresh; crusty

1 : c Extra-virgin olive oil

Directions

0: Preheat oven to 450?

1: Combine first 9 ingredients in a large bowl, and stir well

2: Set aside

3: Place a 10-inch nonstick skillet coated with cooking spray over medium heat until hot

4: Add garlic; sauté 3 minutes

5: Stir in spaghetti mixture; spread evenly in bottom of skillet

6: Cook over medium-low heat 5 minutes or until almost set

7: Arrange tomato slices over frittata; sprinkle with Asiago cheese

8: Wrap handle of skillet with foil; place skillet in oven, and bake at 450? for 5 minutes or until set

9: Note: Substitute 3/4 cup egg substitute for 5 egg whites and 1 egg yolk, if desired
