Ingredients

1/4 : c Margarine -- softened

1/2 : c Buttermilk* -- at room

Directions

0: Preheat oven to 350*

1: Lightly coat muffin pans with non-stick cooking spray

2: Cream oil and sugar together until smooth

3: Add the egg whites, applesauce, and skim milk, mix well

4: In a large bowl, combine flour, wheat bran, baking powder, baking soda, salt, cinnamon, oats, and walnuts

5: Pour the creamed mixture into the dry ingredients, and stir until smooth

7: Bake for 22 to 25 minutes or until the muffins are slightly firm to touch
