2 : c Flour
1/4 : ts Salt
1 : c Soft butter
1 : c Sugar
1 : tb Grated orange peel
5 : Eggs, room temperature
0: Sift flour with baking powder, salt and sugar; combine with elder flowers
1: Combine beaten egg, milk and butter
2: Add all at once to dry ingredients and stir lightly until blended
3: Quickly stir in orange juice and grated orange rind
4: Fill greased muffin wells 2/3 full and bake at 375 F
5: about 25 minutes
6: Serve hot with orange marmalade
7: If desired, drop a spoonful of orange marmalade on top of each muffin before baking
