2 : c Flour
1/4 : ts Salt
1 : c Soft butter
1 : c Sugar
1 : tb Grated orange peel
5 : Eggs, room temperature
0: 1 T sugar 1 pn salt 2 ea eggs 1 t vanilla 1/2 c milk 1/2 c orange juice 1 ea Grated rind of 1 orange 1/4 c melted butter Resift flour, baking powder, sugar & salt into mixing bowl
1: Beat together in another small bowl eggs, vanilla, milk & orange juice
2: Gradually pour liquid ingredients into flour & stir with wooden spoon to blend well
3: Gently stir in grated orange rind
4: Do not overwork batter; it should remain a little lumpy
5: Finally, stir in melted butter, cover, & put aside for at least l hour
6: Heat waffle iron
7: Scrape batter into pitcher & when iron is ready, pour in enough batter to cover 2/3 of iron's surface
8: Close the cover & bake until most of steam has stopped escaping from around sides of the iron
9: Remove baked waffles at once
