Overnight Caramel Strata recipe

Ingredients

1 : /2 lb New potatoes cut in /2"

-chunks; : -chunks; (about 4 1/2 cups)

2 : tb Olive oil; (original called

-for : -for 4 tbs)

1 : lb Mixed fresh mushrooms;

-halved : -halved or quartered

1 : c Sweet red bell pepper; cut

-in : -in 1/2" chunks

1 : ts Minced garlic

1/2 : c Sliced green onions or

-scallions : -scallions

1 : ts Salt

1/2 : ts Crushed thyme

1/2 : ts Ground black pepper

2 : tb Extra-virgin olive oil

1/2 : tb Ground coriander

1 : ts Ground cumin

1/4 : ts Herb salt (I used more, see

-recipe : -recipe below)

1/4 : ts Cayenne

1 : /2 lb Small okra, rinsed and

-patted : -patted dry

Olive : Olive oil spray

6 : Lemon or lime wedges

Directions

0: Combine sugar butter and corn syrup in heavy saucepan

1: Bring to a boil and dissolve sugar

2: Pour into a 13" x 9" x 2" pyrex and tilt to coat the bottom

3: Arange 6 or more bread slices in a single layer atop caramel

4: Cover with remaining bread slices, trimming to fit

5: Whisk eggs, milk, vanilla and salt and pour over the bread

6: Cover and chill overnight

7: Preheat oven to 350F

8: Bake strata uncovered for approx

9: 40 minutes till well puffed and golden

10: Let stand 5 minutes

11: Cut into portions and serve upside down so that the caramel is on the top

12: Garnish with fruit
