Ingredients

3 : tb Butter or margarine

3 : Cloves garlic; minced

2 : 1/ ts TABASCO pepper sauce

1/2 : ts Salt

3 : c Pecan halves

3 : c King Arthur Bread Flour

2 : ts Instant yeast; NOT Rapid

-Rise! : -Rise!

2 : ts Dough conditioner; Another

Directions

0: (Makes 1 loaf

1: ) Sprinkle yeast over water in small bowl; stir to soften

2: Let stand until dissolved, about 5 minutes

3: Combine 2 cups all purpose flour, cake flour and salt in large bowl

4: Stir in yeast mixture and oil

5: Knead on floured surface until smooth and resilient dough forms, about 10 minutes, adding more flour if dough is sticky

6: Grease large bowl

7: Add dough, turning to coat entire surface

8: Cover bowl with plastic

9: Let dough rise in warm draft-free area until doubled in volume, about 1 1/2 hours

10: Line baking sheet with parchment

11: Punch dough down

12: Knead in cheese and pepper on lightly floured surface

13: Divide dough into 3 equal pieces

14: Roll between hands and surface into 14-inch ropes

15: Working on prepared sheet, braid ropes together beginning in center and working toward each end

16: Tuck ends under and pinch to seal

17: Cover with towel

18: Let dough rise in warm draft-free area until almost doubled in volume, about 1 hour

19: Position rack in lower third of oven and line with baking tiles

20: * Preheat oven to 400 deg

23: Slide loaf and parchment onto baking tiles

24: Bake 10 minutes

25: Mist oven with cold water, using spray bottle

26: Bake 10 minutes longer

27: Mist again

28: Continue baking until loaf is golden brown and sounds hollow when tapped on bottom, about 25 minutes

29: Cool on rack

30: This bread is best served the same day it is baked
