1 : tb Virgin olive oil
2 : lg Tomatoes; chopped
1 : c Cucumber; chopped
2 : tb Onion; minced
2 : tb Lemon juice
1 : tb Chopped parsley; or
Fresh : Fresh mint
1 : c Arugula; or shredded
Lettuce : Lettuce
1/8 : ts Cumin
4 : 6 inch pita bread rounds;
-halved : -halved
0: Prepare waffle iron with cooking spray and heat up
1: In a mixing bowl, combine pumpkin, apples, egg whites, milk, and applesauce
2: In another mixing bowl, combine flour, brown sugar, baking powder, cinnamon, salt, nutmeg, ginger, and cloves
3: Add wet ingredients with dry ingredients just until moistened
4: Pour enough batter to fill two-thirds of the waffle iron
5: Cook until crisp and golden brown
6: Set aside
7: Repeat with remaining batter
