1 : md Eggplant; approximately lb
1 : ts Lemon juice
1 : ts ;salt
1/8 : ts Black pepper
1/4 : c Onion; minced
1/4 : c Green pepper; minced
0: Combine cake mix, oil and eggs in large bowl
1: Stir in chocolate chips and nuts, stir well, Drop by rounded tablespoon onto baking sheets
2: Bake in preheated 350-degree oven for 8 to 10 minutes or until centers are just set
3: Let stand for 2 minutes, remove to wire racks to cool completely
4: Makes about 3 1/2 dozen cookies
5: You can add m&m's instead of chocolate chips , I've done that before
