Directions

0: Use about 1 1/2 pounds sweet potatoes

1: Heat oven to 350 F

2: Beat together margarine, sugar, and salt

3: Add egg yolk, lemon juice, lemon peel and cinnamon

4: Stir in sweet potatoes and milk

5: Mix well

6: Fold in egg whites; pour into pie shell

7: Bake for 40 to 50 minutes or until knife inserted in center comes out clean

8: To reduce saturated fat, use a homemade pie shell made with vegetable oil
