0: Preheat oven to 350 degrees
1: Grease a large quiche dish or 6 to 8 individual ramekins
2: Saute bacon, peppers and onion until soft
3: Drain on paper towel
4: Whisk eggs with potatoes, cheese, salt and pepper
5: Mix in bacon and vegetable mixture
6: Pour into prepared pan spreading mixture evenly
7: Bake for 45 minutes, until center is set or knife inserted in center comes out clean
8: Bake 20 to 30 minutes for individual ramekins
9: Makes 6 to 8 servings
