0: Prepare skillet with cooking spray and heat on medium until hot
1: In a mixing bowl, combine flours, wheat bran, sugar, baking powder, cinnamon, and salt
2: In another mixing bowl, combine vanilla, egg whites, and buttermilk
3: Mix dry ingredients with wet ingredients just until moistened
4: Ladle in the batter, using 2 or more tablespoons per cake
