Ingredients

2 : c Flour

1 : tb Sugar

2 : ts Baking powder

1/2 : ts Baking soda

3/4 : ts Salt

1/4 : c Cold butter

1 : Egg

2/3 : c Buttermilk

Milk : Milk for brushing tops

Sugar : Sugar for sprinkling

3 : c Flour

1/3 : c Sugar

2 : 1/ ts Baking powder

1/2 : ts Baking soda

3/4 : ts Salt

12 : tb Butter

1 : c Buttermilk

3/4 : c Currants

1 : ts Grated orange rind

-(orange : -(orange part, or zest only)

Directions

0: Sauteed Apples: Melt butter in a 8" skillet over moderate heat

1: Add apples and cook,stirring frequently,2 to 3 minutes

2: Stir in cinnamon and sugar;reduce heat to low and cook,covered,2 to 3 minutes,until tender and golden brown

3: Cool slightly

4: Waffles: Sift together dry ingredients

5: Beat egg yolks with sour cream,milk and melted butter in separate bowl until blended

6: Stir into dry ingredients until blended well

7: Stir in apples and pecans

8: Beat egg whites until stiff,moist peaks form

9: Stir about 3 tbsp

10: of the beaten whites into the batter,then gently fold in remaining egg whites until just combined

11: Pour or ladle batter over center 2/3 of hot waffle iron

12: Close lid cook about 4 minutes,until steam no longer emerges from the crack

13: Remove waffle

14: Keep warm in a warm oven while you cook the rest

15: Makes 8 waffles
