0: Greens, a vegetarian restaurant in San Francisco, serves these terrific pastries Makes 12 heat oil in heavy large skillet over medium heat

1: Add onion and garlic and saute 5 minutes

2: INcrease heat to high

3: Add spinach and saute until wilted, about 5 minutes

4: Drain spinach mixture, pressing on solids to release as much liquid as possible

5: Transfer to bowl and cool completely

6: Add goat cheese, pine nuts, parmesan, rosemary and lemon peel

7: Season to taste with salt and pepper

8: Place 1 phyllo sheet on work surface

9: Cut lengthwise into 3 strips

10: Brush with butter

11: Place 1 rounded tbsp filling at 1 end of dough strip

12: Starting at 1 corner,fold pastry over filling, forming triangle

13: Repeat, folding up length of pastry as for flag

14: Brush wit butter

15: Repeat with remaining pastry,butter and filling

16: Transfer turnovers to baking sheet

17: Cover and chill

18: Preheat oven to 375F

19: Bake turnover until golden, about 12 minutes

20: Cool slightly and serve
