James Galway's Soda Bread recipe

Ingredients

1 : Onion, (small) chopped

Butter : Butter or margerine

16 : oz Refried beans

1/4 : lb Cheddar cheese, shredded (up

-to : -to 1/2 cup)

1 : cn Jalape=Fo chiles, (4 ounce)

-drained : -drained and chopped

Salt : Salt and pepper to taste

1 : c Reduced fat mayonnaise

1/2 : Jar canned jalapeno peppers

1 : c Reduced fat mayonnaise

1/2 : Jar canned jalapeno peppers

8 : c All-purpose flour,

Directions

0: The traditional bread of Ireland Sift flour, salt, sugar & baking soda together a few times to mix the thoroughly

1: Make a well in the centre & stir in the buttermilk gradually to make a soft dough

2: Turn out on a floured board & knead lightly for a few minutes

3: Flatten it out to about 1/2" thick

4: With a floured knife, cut a cross on it to help it cook evenly throughout

5: Bake at once in a hot oven (450F, Gas 8, 230C) for 45 min

6: To test whether the cake is done or not, tap the bottom - if cooked it should sound hollow
