Ingredients

115 : g Dried apricots

550 : g Shoulder of lamb; off the

-bone, : -bone,

; : ; trimmed of fat and

Chunks : Chunks

1 : ts Powdered ginger

1 : ts Ground cinnamon

1/2 : ts Freshly ground black pepper

1 : pn Mace or nutmeg

1 : lg Onion; peeled and grated

45 : g Unsalted butter

1 : sm Bunc fresh coriander

1 : sm Bunc fresh flat-leaf parsley

Sea : Sea salt

Directions

0: In a bowl combine flour, baking powder, baking soda and salt

1: In another large bowl, beat eggs; stir in sugar, yogurt, oil and lemon zest

2: Fold in flour mixture to make a smooth batter

3: Spoon into prepared pan; bake for 50 to 60 minutes or until cake tester inserted in center comes out clean

4: Place pan on rack

5: Topping: In a small saucepan, heat lemon juice and sugar; bring to a boil

6: Cook, stirring, until sugar is dissolved

7: (Or place in a glass bowl and microwave at High for 1 minutes, stirring once

8: ) Pour over hot loaf in pan; let cool completely before turning out of pan
