Overnight Yeast Rolls recipe

Ingredients

1 : /2 lb New potatoes cut in /2"

-chunks; : -chunks; (about 4 1/2 cups)

2 : tb Olive oil; (original called

-for : -for 4 tbs)

1 : lb Mixed fresh mushrooms;

-halved : -halved or quartered

1 : c Sweet red bell pepper; cut

-in : -in 1/2" chunks

1 : ts Minced garlic

1/2 : c Sliced green onions or

-scallions : -scallions

1 : ts Salt

1/2 : ts Crushed thyme

1/2 : ts Ground black pepper

2 : tb Extra-virgin olive oil

1/2 : tb Ground coriander

1 : ts Ground cumin

1/4 : ts Herb salt (I used more, see

-recipe : -recipe below)

1/4 : ts Cayenne

1 : /2 lb Small okra, rinsed and

-patted : -patted dry

Olive : Olive oil spray

6 : Lemon or lime wedges

Directions

0: Proof yeast in 2 cup measure and let stand 5 minutes

1: Combine shortening, sugar, and salt in mixing bowl

2: Add boiling water and beat at medium speed with an electric mixer until smooth

3: Add eggs and yeast mixture, beating at low speed until blended

4: Gradually add flour and mix completely

5: Cover workbowl and chill for 8 hours

6: Shape into 1 inch balls and place 3 balls in each greased muffin cup

7: Cover and let rise for 45 minutes or double

8: Bake at 400F for 12 minutes or until lightly browned

9: CINNAMON ROLLS: Divide chilled dough in half

10: Roll each portion into a 12 x 10 rectangle

11: Brush each rectangle with 2 tablespoons melted butter

12: Combine 2/3 cup brown sugar, 1/2 cup raisins, and 1 tablespoon cinnamon, Sprinkle over rectangles

13: Staring with a long side, roll up, jellyroll fashion and press edges to seal

14: Cut into 1 inch slices and place in lightly greased 13 x 9 pan

15: Let rise until double and bake as directed

16: Cool slightly

17: Combine 2 cups powdered sugar, 3 to 4 tablespoons milk, and 1 teaspoon vanilla

18: Drizzle over warm rolls

19: ORANGE ROLLS: Divide dough as above

20: Combine 2 1/2 cups powdered sugar, 2 teaspoons grated orange rind, 1/4 cup butter, melted and 3 tablespoons orange juice

21: Proceed as above

22: Combine 2 cups powdered sugar, 1/2 teaspoon orange rind, and 3 tablespoons orange juice

23: Proceed as above
