Ingredients

4 : Pitas

1 : Egg white

Various : Various spices

2 : x Pita breads (6" diameter)

2 : ts Margarine

2 : ts Oregano

4 : tb Grated Parmesan cheese

Directions

0: Mix this with 3 c flour for about 10 minutes

1: Then add rest of flour and kneed 15 more minutes

2: Let dough rise once to double size

3: Punch down

4: Then divide the dough in two (makes two pizzas)

5: Spread out dough flat

6: Oil the pan with olive oil and sprinkle with corn meal

7: Spread the dough out in the pan and spread it around to cover the entire bottom, then push it up the sides - like a pie crust

8: If it doesn't cover the whole pan push it around til it does

9: Let it rise again

10: Put thin slices of mozzarella over the entire bottom of the pizza

11: Squish and drain well one large can of skinned plum tomatoes, and spread that over the cheese

12: Add a smidge of salt (I also add ground black pepper)

13: Chop or crush garlic over this (I use lots)

14: Basil and oregano sprinkled generously on top

15: Put on filing to taste (I use sliced onions and spicy Italian sausage)

16: Then sprinkle over the top a combo of fresh grated Parma and Romano

17: Bake for 35 to 40 min at 475

18: Crust should be brown and crunchy

19: Hope you like it

20: I usually make two at a time, with one having no meat on it for the non-meat crowd (using zuccini peppers, mushrooms, onions)

21: One pizza is usually enough for 4 people with a salad

22: Hope you like it, David
