Ingredients

-JUDI : -JUDI M. PHELPS

1 : md Eggplant; approximately lb

1 : ts Lemon juice

1 : ts ;salt

1/8 : ts Black pepper

1/4 : c Onion; minced

1/4 : c Green pepper; minced

Directions

0: Mix and sift the dry ingredients; rub in the shortening and mix with the milk to a soft, thick dough

1: Drop by spoonfuls onto a well-greased tin and bake in a quick oven (425) for about 15 minutes

2: These are best when made with butter and come out of the oven as thin, crusty biscuits rather than the thicker variety

3: Twelve biscuits
