Ingredients

3 : Egg whites

2/3 : c Vegeatable oil

2 : ts Vanilla

1 : ts Lemon rind

3/4 : c Sugar

2 : c Flour

2 : ts Baking powder

1/2 : ts Salt

2 : 1/ c All-purpose flour

1 : /2 c Sugar

1/2 : c Cocoa

2 : ts Soda

1/2 : ts Salt

2/3 : c Cooking oil

2 : tb Vinegar

1 : tb Vanilla

2 : c Cold water or coffee

1/4 : c Sugar

1/2 : ts Cinnamon

Directions

0: Heat oil in non stick skillet

1: Saute onion until soft

2: Add 1 cup of choice of vegetables

3: to "swerat" over low heat until tender but not mushy

4: Stir in tomato with the beaten eggs

5: Add cheese now if you are using it

6: Season lightly

7: No salt if using cheese

8: Stir until lightly scrambled

9: Divide into 6 servings
