Ingredients

2 : md Cucumbers

1 : lg Onion; peeled

1 : c Hot water

3 : tb Sugar

1 : tb Salt

1 : tb Red pepper flakes

1 : c White vinegar

1/2 : c Rice vinegar

1/4 : c Sugar

2 : tb Plum sauce

1 : tb Thai fish sauce

1 : tb Fresh lime or lemon juice

2 : ts Tomato paste

1 : ts Minced garlic

1/2 : ts Minced serrano chili

1/2 : ts Ground red chili paste

1/2 : ts Sweet paprika

1/2 : ts Salt

1/2 : ts All-purpose flour*

1 : tb Water; *mixed into flour

2 : c Glutinous rice (see notes)

3 : 1/2 c Coconut milk (see notes)

1/2 : c Sugar

1 : ts Salt

6 : Mangoes-ripe,peeled & sliced

1/8 : c Unseasoned rice wine vinegar

Directions

0: Adjust oven rack to lower middle position and heat oven to 375 degrees

1: Mix flour through nutmeg in medium bowl; set aside

2: Beat butter in large bowl of electric mixer or with handheld mixer at medium speed until light and fluffy, 1 to 2 minutes

3: Add brown sugar, increase speed to medium-high, and beat until combined and fluffy, about 1 minute longer

4: Add eggs one at a time, beating thoroughly before adding the next

5: Beat in vanilla, molasses, and sour cream until thoroughly combined and creamy, about 1 minute longer

6: Reduce speed to low; beat in buttermilk and half the flour mixture until combined, about 1 minute

7: Beat in remaining flour mixture until incorporated and slightly curdled looking, about 1 minute longer, scraping sides of bowl as necessary

8: Stir in bran and raisins

9: Spray a twelve mold muffin tin (each mold measuring 1/2 cup) or a six mold muffin tin (each mold measuring one cup) with cooking spray or coat lightly with butter; divide batter evenly among molds using spoon or ice cream scoop

10: Bake until a toothpick inserted into center withdraws cleanly or with a few moist particles adhering to it, about 25 minutes

11: Set on wire rack to cool slightly, about 5 minutes

12: Remove muffins from tin and serve warm
