Ingredients

3 : lb Skirt Steak

2 : Large Yellow Onions

2 : tb Vegetable Oil

16 : Flour/Whole Wheat Tortillas

2 : tb Garlic, Minced

PICO : PICO DE GALLO

1/2 : c Fresh Cilantro, chopped

Directions

0: Cook bacon in a large skillet until crisp; remove bacon, reserving 2 tablespoons drippings in skillet

1: Crumble bacon, and set aside

2: Cook onion and green pepper in drippings over medium-high heat, stirring constantly, until tender

3: Place hash browns in a greased shallow 3-quart baking dish; sprinkle evenly with Swiss cheese and half of bacon

4: Top evenly with vegetable mixture

5: Beat cream cheese at medium speed of an electric mixer until creamy

6: Add eggs and milk; beat until smooth

7: Add parmesan cheese, salt, and pepper; beat just until blended

8: Pour cream cheese mixture over vegetable mixture; sprinkle with remaining half of bacon

9: Cover and chill 8 to 12 hours

10: Uncover and bake at 350 degrees for 35 minutes or until set and lightly browned
